This week’s Frugal Homemade feature is: Banana bread. We happen to think that this is the “best ever banana bread,” so I hope you do, too! Overripe bananas tend to happen to the best of us, so you may as well put them to use with this easy, delicious recipe.

Best Ever Banana Bread
You will need the following ingredients:
3 eggs
1 1/2 cup sugar
1 cup canola oil
4 ripe bananas
2 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon
Directions:
- Prepare loaf pan(s) with cooking spray and preheat oven to 350 degrees.
- I used 3 mini loaf pans, but you can use a regular loaf pan — it’s up to you!
- Beat eggs and mix in sugar, canola oil, bananas, and vanilla.
- Mix until thoroughly combined.
- Add dry ingredients: flour, salt, baking soda, and cinnamon.
- Mix well and pour into prepared loaf pans.
- Bake at 350 degrees for 45 minutes – an hour & fifteen minutes, depending on which pans you are using. When in doubt, toothpick test!

Here it is: THE BEST EVER BANANA BREAD 1- 8 oz cream cheese, softened 3/4 cup butter, softened 2 cups sugar 2 eggs 3 cups flour 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 4 very ripe medium bananas, mashed (the riper, with black skin, the better) 1 cup chopped nuts (Nuts are optional, but I never add them.) Preheat oven to 350. Beat cream cheese, butter and sugar until light and fluffy. Beat in eggs. Beat in mashed bananas. Combine flour, bak. powder and soda, and salt. Stir it in the wet ingredients until combined. Don't overmix. Grease your molds. Depending on the size of your loaf molds, you'll have enough for 2 or 3. I prefer to bake it in one 13x9 pan for about 45 minutes. Sometimes I even stir some Nutella in and make it a bit marbled. :) Don't overbake. This banana bread is so moist and fudgy, you'll love it. For even quicker treat, bake it in muffin pans in paper cups (you'll get 24 muffins). As muffins, they don't darken a lot on the top, so don't overbake. Test with a toothpick after 17-20 minutes. I haven't tried this one, and I'm sure it's good, but I can gurantee its not the best ever. :) I don't have time now to post the recipe, but I will later if you want. I gurantee 100% you will change your mind. The recipe I use is from Southern Living cookbook from 2005 I think, and EVERYONE who has ever tried it says it's the best ever and wants the recipe. :)
