Hey, let’s update this super old Berry Cheesecake Chips recipe with some newer photos & clearer directions — since it’s still yummy! I made these again this week, since blueberries and strawberries have been on sale at both ALDI and my local produce stores. The whole batch disappeared within minutes.

So if you need a last minute easy dessert recipe, I’ve got your back: This is one of the most irresistible ways to use fresh summer berries, ever. These homemade cheesecake chips topped with fresh berries are downright dangerous. And, now you have been warned, so I can’t be held responsible for any consequences…

… sweet, sweet, delicious consequences… why are you still reading this and not preheating your oven right now? consequences… Red-white-and-blue berry cheesecake chips are perfect for the Fourth of July, but are also a great summer dessert for any occasion.

To make the cinnamon chips today, I used smaller El Milagro flour tortillas. You’ll need fewer, though, if you’re using larger burrito tortillas. Eyeball a cookie sheet full of cut up tortilla chips, and you should be good! Top off those homemade cinnamon chips with a quick cheesecake-ish mixture plus some fresh berries, and everything comes together in a sweet & cinnamon-y, creamy & crunchy flavor explosion of a dessert.

Berry Cheesecake Chips

Ingredients

– for the chips layer

Six flour tortillas (I used smaller El Milagro tortillas, but you might need fewer if you’re using larger burrito tortillas.)
2 Tbsp butter
1 1/2 Tbsp sugar
1/2 tsp cinnamon

– for the cheesecake layer

8 oz brick cream cheese, softened and chopped into chunks
1 tsp vanilla extract
1/4 cup sugar
1/2 pint fresh blueberries
1/2 lb strawberries, sliced

Directions

Put the cream cheese out to soften, and preheat your oven to 350 degrees.

Melt the butter, then brush each tortilla with melted butter.

Mix the sugar and cinnamon together and sprinkle cinnamon sugar generously over the buttered tortillas. Snip each into large triangles with kitchen shears. (I simply quartered mine.)

Bake the cinnamon sugar tortillas on a rimmed baking sheet at 350 degrees for 12 minutes, or until browned and crispy. Hint: If you stop right here, these are also amazing by themselves as cinnamon sugar chips!

While your chips are baking, whisk together the cream cheese, vanilla, and sugar until nicely combined and slice the strawberries.

Remove the chips from the oven, then spread each with the cream cheese mixture.

Top each cheesecake chip with fresh berries, then serve immediately.

Note: Note: It’s OK if the tortilla triangles overlap slightly on the baking sheet. Watch to make sure they crisp up nicely, without getting overly browned.
