Who’s ready for a fun and easy summer twist on regular burgers & buns? I thought it would be a nice change this week to deconstruct a turkey burgers recipe into these… BBQ Potato Chip Turkey Cheeseburger Bowls! Yes, I’m also still celebrating the safe return of romaine after the latest scare, as it’s one of my favorite hearty, crunchy lettuces to use in dinner salads — and how better to celebrate than with an easy 25 minute summertime dinner recipe?
And no, these chips here aren’t actually just sitting there for garnish: For an extra flavor kick, I thought it would also be a nice change to crush up some BBQ potato chips and substitute them for the more usual bread crumbs to help hold today’s turkey burgers together (and keep them gluten free). Then, I threw in just a smidgen of BBQ sauce to take all that BBQ flavor up a notch, and served those finished BBQ potato chip turkey burgers along with their “toppings” on top of a bed of crunchy romaine.
(I thought of using chopped up pickle instead of cucumber for authenticity’s sake, but just couldn’t bring myself to put pickles in salad. Try it if you’re braver than I am, maybe.)
Anyway, today’s Sunday Scratchups (your weekly recipe from scratch around grocery sales and affordable ingredients) features ground turkey, which often goes on sale for about $2 a pound at ALDI and elsewhere. Add just a few summery ingredients, and you have yourself a BBQ in a bowl — and a quick and simple weeknight dinner idea for the whole family.
BBQ Potato Chip Turkey Cheeseburger Bowls
Ingredients
– for the burgers
1 cup crushed barbecue potato chips
1-1.25 lbs ground turkey
2 Tbsp BBQ sauce
Black pepper, to taste
– for the salad bowl
2 hearts romaine lettuce, chopped
2 vine ripe tomatoes, chopped
1/2 of a medium cucumber, peeled and chopped
1 small onion, diced
1 cup shredded cheddar
Ranch dressing
Directions
Crush up some barbecue potato chips until you have one cup of BBQ potato chip crumbs. (I just pulsed the chips a few times in my little food chopper — I do so love this food chopper! — which took two batches to fill one cup.)
Combine all burger ingredients in a large bowl, then form the ground turkey mixture into four patties. Grill or pan fry your turkey burgers to desired doneness, pressing down with a spatula occasionally to flatten slightly and ensure that they cook through.
Meanwhile, chop the lettuce and vegetables for your salad. Divide the chopped romaine among four plates or bowls, and top each salad with a burger, tomato, cucumber, onion, and cheese. Serve with ranch dressing and more barbecue potato chips — you can also crumble some right on top, if you’re feeling adventurous.
Note: Red onion would be a little sweeter and prettier, but you makes do with what you have on hand! 😉 You can also swap out for your own favorite lettuce(s) and/or burger toppings — avocado, for instance, would be a lovely addition here. These burger bowls are gluten free as long as your chips and dressing are; the barbecue potato chips and dressing from ALDI that I used here were both labeled GF.
These Easy BBQ Turkey Burgers are Kid Approved
I can tell you with confidence that these BBQ turkey burgers are kid approved, since just the smell of burgers cooking lured both boys into the kitchen, where they taste tested and gave their stamp of approval to the recipe. The crunched up potato chips and BBQ sauce give these BBQ potato chip turkey cheeseburger bowls a smoky BBQ flavor, which pairs nicely with the cool crunch of cucumber and tomato. Just break up these tender turkey burgers with a fork while eating, and enjoy a hearty all-in-one cheeseburger salad for dinner!
I used chili lime garlic ranch dressing for an extra kick (and because I found it on special buy at ALDI and was intrigued), but plain old ranch would work as well. Or even Thousand Island, if you’re into that sort of thing. BBQ potato chip turkey burgers are naturally gluten free, as is the entire salad bowl.
