We’re 30 minute weeknight meal-ing it up again this week, with an easy and savory Smoked Sausage & Tortellini Skillet dinner. Let’s just keep things super simple today by using refrigerated tortellini and jarred pesto sauce, because — well, I don’t know about you, but it’s been an insanely busy week over here.
Today’s dinner brings the pesto-y flavors of summer into a long winter’s day, as we mash up that memory of warmer days gone by with all of the hearty comfort food fun of a cast iron skillet recipe.
When you choose ingredients that pack a lot of flavor, you don’t need a lot of them to complete your meal. Keep it simple, keep it easy, and keep your family satisfied with a whole cast iron skillet full of sausage, tortellini, and veggies.
Smoked Sausage & Tortellini Skillet
Ingredients
1 Tbsp olive oil
9 oz three cheese refrigerated tortellini (I used tri-colored)
14 oz smoked sausage or Polska kielbasa, sliced into half moons
8 oz baby bella mushrooms, roughly chopped
8 oz broccoli crowns, cut into small florets
1/4 medium yellow onion, diced
1 tsp minced garlic (about 2 cloves)
1/3 cup prepared pesto
1/2 cup shredded Parmesan
Directions
Slice sausage into half moons, and cut up the mushrooms, onions, and garlic. Start the olive oil heating in a 12″ cast iron skillet over medium heat when you’re almost done cutting up the veggies.
Start water boiling for tortellini. Cook tortellini per package directions, then drain.
While the pasta is cooking, add the sausage to the skillet and brown over medium heat for three minutes, stirring occasionally. Stir in the onion, broccoli, mushrooms, and garlic and continue to saute for another eight minutes over medium heat, stirring occasionally.
Turn off the heat under the pan and stir in the cooked tortellini and pesto until nicely combined. Sprinkle everything with shredded Parmesan.
Move your skillet onto the middle rack of the oven and broil on high for four minutes to melt the Parmesan across the top. Serve.
Punch up basic tortellini with smoked sausage, pesto, and veggies!
This one dish meal has it all, all in one, and it’s so garlicky pesto-y good. We enjoyed ours with toasted sourdough, but you could substitute salad to lighten things up a little. I used broccoli and mushrooms because I had them on hand, but you could also swap out different veggies as desired.
