These Mini Strawberry Tarts are super easy for kids to make — as evidenced by my 10-year-old here!
Up today we have a not-a-health-food-but-how-cute-are-these Mini Strawberry Tarts recipe from Mr. 10! He recently checked a kids baking book out of the library, got inspired, and made up this batch of mini strawberry tarts (or “baby pies”) with minimal help and input from me. He’s so cool. 🙂 And this is an easy-peasy recipe to make with your own kids — or to let them make for you!
So anyway, Mr. 10 has had some extra time on his hands this week during the Thanksgiving break — and this morning, as he was flipping through Baking Class: 50 Fun Recipes Kids Will Love to Bake, he came across a cute looking recipe for “teeny tiny apple pies.” (Baking Class, by the way, is highly recommended for your own little bakers; it’s quite well done with large step-by-step, easy-to-follow photos!)
Although Mr. 10 was inspired by the mini pie photos in the book, he oddly enough does not like apple pie. He loves strawberries, however, so he decided to modify the recipe and use a prepared pie crust I had in the fridge to make his own batch of mini strawberry tarts.
When I bent my no added sugar rule a little this morning to try a bite (because: When your kids make something for you, you try it!), I’d swear that these came out tasting remarkably like I vaguely remember strawberry Pop-Tarts tasting (but without the weird chemical aftertaste…!).
Note: The original recipe uses homemade pie crust, the recipe for which is also found in the book, and adds a little orange juice and butter to some chopped apple to help the teeny tiny pies stay juicy. We decided this was unnecessary with strawberries, however — and while I might have added a tiny bit of lemon juice to cut the sweetness if I were making these tarts, this was not my project.
Mini Strawberry Tarts
Ingredients
One cup sliced fresh strawberries
2 Tbsp sugar
1 tsp cinnamon
One box refrigerated pie crust (note: Mr. 10 used about 1.5 crusts, so you could actually add more strawberries and make a few more mini tarts here, if desired)
1 egg
1 Tbsp milk
Directions
Preheat oven to 375 degrees. Slice strawberries, then mix them with sugar and cinnamon and set aside.
Cut out twelve circles of pie dough using the rim of a drinking glass, then press each circle into one cup of a mini muffin tin. (You don’t need to grease the tins.)
Fill each cup with sugary strawberries. Cut out decorative shapes or strips from your leftover dough to top each mini tart.
Beat egg and milk together in a small bowl and brush the top crusts of each mini tart with the egg wash. Bake at 375 degrees for 16 minutes, or until golden brown.
Let tarts cool for a few minutes, then run a butter knife around the edge of each tart to easily pop them out of the muffin tin. Enjoy!
Note: Mr. 10 used a mini star veggie cutter from this set as well as a kitten cookie cutter to make the shapes atop his mini tarts, but you could use whatever cookie cutters you have on hand, or just make a little lattice crust with strips of dough.
Well, those were a hit!
Mr. 10 was super pleased with how his creation came out, and this is such a fun kid-friendly baking idea! We brought a few of the mini strawberry tarts to a friend’s house today, and I’m sure that High School Guy will handily take care of the rest.
Oh, and Mr. 10 would also like me to tell you that you shouldn’t try to make the “super tall stars” on top like he did on a couple of the tarts here, because “that part came out kind of weird.” 🙂 And as for that the single cat-topped tart? That one, of course, is reserved for the baker himself.
