Easy Beef, Tomato, and Spinach Tortellini

Surprise! It’s a bonus belated Sunday Scratchups recipe on Tuesday, because I also wanted to tell you about this Easy Beef, Tomato, and Spinach Tortellini that I threw together with some of the ground beef I needed to use up this week.

More ground beef, of course, disappeared into the taco zucchini boats I told you about the other day… then just as quickly disappeared into my family.

So why is this easy beef, tomato, and spinach tortellini recipe a keeper? Let me count the ways…

  1. It can be on your table in about 20 minutes start to finish, making it a great weeknight dinner option.
  2. It’s a great alternative if you like all the trappings of pasta, but want less of a heavy sauce.
  3. It requires just one pound of ground beef, yet is super meaty and satisfying.
  4. It’s a great way to use some of your fresh garden tomatoes in season.
  5. And… it’s darn tasty!

Easy Beef, Tomato, and Spinach Tortellini

Ingredients

1 lb ground beef
1.5 tsp minced garlic (or 3 cloves, chopped)
1 Tbsp chopped yellow onion
4-5 tomatoes, seeded and coarsely chopped
1 tsp basil
1/2 tsp oregano
1/4 tsp crushed red pepper
Sea salt, to taste
Black pepper, to taste
9-10 oz refrigerated three cheese tortellini, cooked per package directions
1 cup shredded Parmesan
5 oz fresh baby spinach

Directions

Cook tortellini to package directions, drain, and reserve.

Meanwhile, brown ground beef, garlic, and onion in a large skillet over medium heat until beef is completely cooked through.

Drain beef, then stir in tomatoes, spices, and Parmesan.

Cook the beef, tomato, and Parmesan mixture over medium heat for five minutes, then wilt in spinach. Once spinach is completely wilted, stir in cooked tortellini, heat through, and serve immediately.

Optional: Top with additional Parmesan and fresh chopped parsley.

That’s it — You don’t need to add any more sauce; the fresh tomatoes and Parmesan suffice to make their own light sauce in this flavorful 20 minute beef, tomato, and spinach tortellini skillet recipe. This was my first time trying yoiur weekly meal plan & shopping at Aldi. And this recipe was delicious! My family approved & they are picky! Will be making this one again FOR SURE! My husband loves this recipe! He's so torn while eating it for dinner because he wants to eat the entire pan in one sitting but wants leftovers as well! :D We could eat this every week.....and often do!

This was yummy! I served this with the baguette and olive oil, as well as Aldi's mini Cucumbers and Hummus. It was a hit at our house. Incredibly easy and filling!

This was really good! I adapt your recipes to make gluten free meals. For this one, I subbed a third bag of livegfree fusilli for the tortellini. I topped prepared plates with shredded mozzarella to balance out the missing cheesiness from tortellini. Sharing for anyone else that’s GF!
