Here’s your easy weekly ALDI meal plan for the week of 3/12/17: Pick up everything on the shopping list below, then start cooking on Sunday! Hope you find it useful.

Note: Main dish recipes in these plans only repeat a maximum of once a month, but you will see favorite easy recipes come up again on these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning is mixing old stand-bys with something new each week! 🙂

ALDI meal planning week of 3/12/17 – 3/18/17

Six complete dinners for a family of four for $60.00

Prices here are collected from this week’s ad and my local store in the Chicago suburbs, but may vary by location & region. I’m assuming here that you already have pantry basics like olive oil, vinegar, and spices. Read through the recipes before you shop to make sure you have necessary pantry staples on hand.

Six Easy Dinners from ALDI for $60.00

  • Sunday: Corned beef, cabbage, & red potatoes. (Use your own favorite method of cooking it, or this slow cooker recipe is super easy. I like to add some additional minced garlic to mine before cooking, too…) Serve half of your bag of green grapes on the side.
  • Monday: One pot curried chickpeas with spinach. Sides: Strawberries and Sriracha carrots.
  • Tuesday: Chicken burrito bowls (use 1.5 lbs chicken) topped with shredded cheddar and diced avocado. Side: Steamed broccoli topped with a little garlic salt & shredded cheddar (reserve one crown for Thursday).
  • Wednesday: Slow cooker buffalo ranch chicken potato casserole (use 2 lbs of the chicken & red instead of gold potatoes). Sides: Garden salad with ranch dressing, carrot coins, & bacon bits, plus the rest of the green grapes.
  • Thursday: Easy one pan sriracha chicken & veggies. (Slice 1.5 lbs of chicken into strips, and substitute yellow onion for red; white mushrooms for baby bella. Note: ALDI does not carry sesame oil — just a little bit adds a nice flavor & is a great product to have on hand for a lot of recipes, but feel free to leave out if you don’t have in your pantry. While cooking: Cut large slices from your cauliflower and reserve them for Friday’s side dish; use the leftover florets in the Sriracha chicken.) Sides: Cooked white rice & sauteed spinach with minced garlic, lemon juice, bacon bits, & crushed red pepper.
  •  Friday: Baked garlic lemon tilapia (substitute in 1.5 tsp dried parsley for the fresh). Side: Grilled cauliflower steaks (which you can make on a grill pan on the stove top) and oven baked red potato wedges (use a little olive oil, garlic, and seasoned salt & get them going in the oven well before the fish).
  • Saturday: Leftovers, or date night!

If one or more of these recipes aren’t to your taste or if you have other ingredients to use up, just adapt this ALDI meal plan to your own family’s preferences or use these ideas to supplement your own meal planning for the week. These meals will likely run you even less if you supplement this week’s ALDI purchases with clearance meat you already have in your freezer, produce you have on hand, and/or sale produce from your local produce market.

Did my shopping yesterday, and I am making two recipes right now. My husband loves the smell of the chickpea dish. Will post again once we've eaten the dishes!

Happy our grocery bill was significantly less!

Awesome! What's funny is that my husband loved the chickpea dish -- and he's a hard-core carnivore. We even had a leftover smorgasbord dinner and he went for the chickpeas over the chicken. :)
