Here is your easy ALDI meal plan for the week of 10/9/16. Pick up everything on the shopping list below, then start cooking on Sunday! Hope you find it useful.

Note: I try not to repeat the same recipe here more than once a month, but you will see favorite easy recipes come up again on these weekly ALDI meal plans as the same meats and produce items come up on sale again. ?

ALDI meal plan week of 10/9/16 – 10/15/16

Six complete dinners for a family of four for $60.00

Note: Prices are collected from this week’s ad and my local store, but may vary by location. I’m assuming here that you already have pantry basics like olive oil and spices on hand.

Six Easy Dinners from ALDI for $60.00

  • Sunday: Sunday “brunch” breakfast for dinner — A six egg omelet with mushrooms, cheddar, & broccoli. Sides: Sausage patties (slice and fry up the sausage roll), toasted Italian bread, strawberries, and breakfast potatoes (make with red potatoes, green peppers, onions, minced garlic). Also cook up a pot of rice to have ready for Monday’s dinner.
  • Monday: Veggie fried rice — Saute up diced carrots, chopped broccoli florets, diced onion, and 1-2 minced garlic cloves in a little oil in large pan over medium heat until tender, then stir in the rice you cooked on Sunday. When rice is heated through, push to sides of pan, add a little oil to the center, and pour in two beaten eggs. Scramble eggs with spatula while cooking, then stir them into rice and season with soy sauce to taste (Optional: Add in a little chili garlic paste if you like some heat.) Remove from heat & top with chopped green onions. Sides: Tomato cucumber salad, organic mixed greens salad topped with diced tomato & green pepper w/ Italian dressing, and clementines.
  • Tuesday: Salsa skillet pork chops. (ALDI only sells salsa verde as a special buy and doesn’t carry this week, so modify the original recipe by using half the jar of chipotle corn salsa + the can of black beans here to create a quick & delicious salsa pork chop dish w/ corn and beans.) Sides: Rice and steamable veggies.
  • Wednesday: Slow Cooker Italian Beef made with whole garlic cloves, served on ciabatta rolls with provolone + the peppers, garlic, and juice from the pot. [Yes, we had this a couple weeks back — but it’s SO good, and chuck roast is still on sale & back in stock at my store, finally.] Side: Organic mixed greens salad with chopped carrots, diced tomato, sliced onion, shredded Parmesan, and Italian dressing, plus oven roasted diced red potatoes.
  • Thursday: Use your last four eggs to make this Carnitas Hash, but as Italian beef hash using leftover Italian beef & potatoes + green pepper & onion. Sides: Italian bread toast, clementines, apple slices.
  • Friday: Slow Cooker Italian chicken & carrots — Pour 1/4 cup Italian dressing into the bottom of your slow cooker. Season chicken with Italian seasoning, salt, & black pepper, and place on top of dressing. Chop a few carrots and place on top of chicken. Pour on 3/4 cup Italian dressing, top with 1/2 cup shredded Parmesan, and cook 6 hours on low. Sides: Sauteed mushrooms (in a little butter + olive oil w/ one clove minced garlic, salt & pepper, & herbs of your choice — thyme is nice!), and apple slices.
  • Saturday: Leftovers — or date night :)!

Carnitas HASH. LOVE THAT. Adding to a future menu.

Also, last week's menu inspired me to shop Aldi last week, forgoing all other couponing excursions (except my beloved CVS, of course) and it was awesome. I just used the meat already in my freezer and picked up the stuff I needed to flesh out the menu but I spent less than $50 and it was fabulous.

I'll be traveling off and on for the next few weeks but in November, I'm definitely going to create an Aldi meal plan or two. It cuts down on shopping time and planning time, quite a bit -- and during the holidays, I'll take that extra time back for other things.

I've been doing a LOT more shopping at ALDI lately -- it's so much easier. Definitely try the carnitas hash -- I've made it with leftover pot roast, too, and it's pretty adaptable. :)
