Welcome to the September 4, 2016 edition of Sunday Scratchups: Your weekly recipe from scratch around grocery store sales and affordable ingredients. This week some of you might have cheap sausage and corn in the house, so I thought I’d share this easy Sheet Pan Smoked Sausage & Veggies I scratched up with mine. (I also used some of the bag of red potatoes left over from last week’s Instant Pot Mashed Potatoes recipe, as well as a cheap pack of baby bella mushrooms from last week’s ALDI produce deals.)
I’m becoming quite fond of one-pan recipes, and we just paired our smoked sausage & veggies with a green salad and some fruit for an easy and satisfying weeknight meal! This sheet pan dinner recipe is also naturally gluten free.
Ingredients
2 ears of corn, cut in thirds
2 medium red potatoes, cut in small chunks
8 oz baby bella mushrooms, halved
2 small yellow onions, quartered
1/4 cup olive oil
1 Tbsp Old Bay seasoning
1 Tbsp minced garlic
pinch of sea salt
14 oz smoked sausage links
Directions
Add all veggies to large bowl. Combine olive oil and spices, pour over veggies, and toss to coat. Spray a rimmed sheet pan with cooking spray and arrange veggies in a single layer around the outside, leaving room for the sausage in the middle. Cut a small slit in each sausage so that they brown without bursting, then place in a single layer in the middle of the baking sheet.
Cook at 400 degrees for 35-40 minutes or until potatoes are cooked through, stirring halfway. You can choose either to serve the smoked sausage on a bun, or just to cut it up and eat it with the veggies.
You can switch up the veggies here if you’d like; I just used what I already had handy in the house to throw this recipe together. These proved to be a pretty good combination with just a little bit of a kick from the Old Bay, although next time I might go a little spicier by adding a touch of crushed red pepper as well, and maybe some sweet peppers and whole garlic cloves for a touch of extra color and flavor.

I made this recipe last night. I love how easy this is, and it was a great way to use up a few ears of corn and some potatoes I had left from other meals. I liked using Old Bay seasoning, which I have in my pantry but rarely think to use. It gave everything a nice warm seasoning. And only one pan to clean up---yay! ;)
