Bacon, Egg, and Cheese Avocado Toast

Welcome to the May 22, 2016 edition of Sunday Scratchups: Your weekly recipe from scratch around grocery sales and/or frugal ingredients. It’s a breakfast week here, as we take basic avocado toast up a notch with this easy & delicious bacon, egg, and cheese avocado toast recipe. Some of you may have picked up cheap bacon & eggs this weekend (love those seasonal sales…)

And seriously? Whenever $.49 avocados show up in the ALDI ad (alas, as I look back at this recipe a year later we’re experiencing a shortage and the price has over doubled!) there is much rejoicing! (And if you’re wondering if this recipe really needs the cheese, perhaps you should check out this piece titled “Americans need to eat three more pounds of cheese annually.” It’s our patriotic duty, really…)

Bacon, Egg, and Cheese Avocado Toast

ingredients

Ingredients

2 slices of good quality, sturdy bread (I used sourdough)
butter
sharp cheddar cheese, sliced
1/2 a ripe avocado
2 pieces cooked bacon
2 eggs
black pepper, to taste

Directions

Butter both sides of your bread. Brown one side in a pan over medium heat, then flip, top with cheese slices, and continue to cook over medium heat until the other side is browned and cheese is melting. While bread is browning, mash avocado in a small bowl, slice bacon into several smaller sections, and fry two eggs sunny-side up in a separate small pan.

Remove toasted cheese bread to a plate. Spread each slice with mashed avocado, arrange bacon pieces across the avocado layer, then top with a fried egg. Add fresh cracked black pepper to taste. Serves two.

Looks so good, only I would use Slap Ya Mama seasoning instead of or even with the pepper.
