Midweek meal planning 10/8/15

Welcome back to Midweek Meal Planning for the week of 10/8/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip on Wednesdays and since midweek is when many of us start running out of steam, we buck the trend here and go with Wednesdays or Thursdays.

Midweek meal planning

  • Sunday: Lasagna Rollups from the Pioneer Woman. Junior High Guy and MashupDad made these in two casserole dishes (I’m pretty sure there was some extra meat involved over what the recipe called for, because the Italian sausage I bought is GONE, lol). This was a big, filling recipe — We ate lasagna both Sunday and Weds., and I also froze half for another night.
  • Monday: Leftover Parsley Pesto Pasta.
  • Tuesday: The kids talked me into Buona Beef as I was running them around town — MashupDad’s been out of town.
  • Wednesday: Leftover lasagna rollups.
  • Thursday: I have pulled pork going in the Crock Pot from yesterday’s crazy cheap pork roast deal at Jewel.
  • Friday: Leftover pulled pork, and I am noodling around some way to use the acorn squash from ALDI, too ($.79 each — they weren’t huge, but not bad at all for $.79).
  • Saturday: Junior High Guy’s birthday party, so what else but: Pizza.

Sun. - Pizza Mon - Eat out Tues. - Flattened chicken thighs (with onion powder, garlic powder, pepper), plus "hot crash" potatoes (found recipe on internet many years ago), salad Wed. - "Shoney's Slow-Cooked Pot Roast" (from Todd Wilbur's Top Secret Restaurant Recipes June 1997, p. 268, along with "Houlihan's Smashed Potatoes" (same book) (p. 157), with gravy, salad, green beans Thurs. - Teeny steaks, homemade garlic cheese bread (well, a football shaped roll of some kind), green beans Fri. - Jamaican-Style Beef Stew (a new recipe for us), over mashed potatoes, from Taste of Home, "Everyday Slow Cooker & One Dish Recipes" book from 2010, p. 112. Sat. - Tex-Mex fajitas (from either a Taste of Home recipe or Quick Cooking (?), (chicken thighs, chili powder, etc.), with green pepper, onion, cheese, sour cream, salsa, flour tortillas Sun. - I don't know yet - have to figure that out today.

Sunday - we ordered pizza - yum! Monday - steaks with rice and beans, spinach salad Tuesday - breakfast casserole...I thawed turkey breakfast sausage and had to use it:) I added some wilted spinach, and made a hash brown crust - it was good. Wednesday - beef stew from soup bones I made in the crock pot the day before Thursdays - FIFO = leftover day Friday - DH bday so we are having the family over and I'm making spinach/sausage bread, meatballs, something with quinoa (for my nephew who decided he doesn't eat meat) a chopped salad and some fruit. Saturday - having a girls night with my dd, her friend, and the friend's mom instead of the homecoming dance, so we are making stir fry.

Christine can I have the Parmesan chicken recipe?

Rachel, I found this recipe on www.bettycrocker.com Butternut Squash Enchiladas http://www.bettycrocker.com/recipes/easy-butternut-squash-enchilada-casserole/c172c235-4f55-449a-a143-042af525db45 what if you added some pork meat to it? Or this Mexican style with pork http://www.tablespoon.com/recipes/butternut-squash-lasagna/2be6ff61-9e61-49b1-a44b-ab28b070cf43/ My family will not eat squash. Too bad because I like it and these recipes looks so good.

I am leery of those -- I'd make a whole squash lasagna and probably end up having to eat it all myself, lol. Mine are iffy on squash but I try once a year to see if their tastebuds have matured ;)

That' is a great picture! And the food looks good too! Sun: We went to a dinner with friends on Sat. and they gave our family all of the leftovers: taco meat, toppings, beans, chips, salsa!!! Mon: Parmesan Crusted Chicken in the crockpot, mashed potatoes, salad Tues; Chili Wed: pasta with homemade sauce and Italian sausage Thurs: Patty Melts with Pub Burgers from Jewel, Caputos had Amer. cheese $3.99/lb, Costco Rosen Rye bread (sampled @ Costco with Manny's corned beef. Too bad this is such a small package for my family. It was really good!) Fri: Only 11yo home with DH so thinking we will go out to eat. WE have a few giftcrds Sat: Only 11yo again and DH so I may make these pork chops I got at Jewel last week with Hormel Q and BOGO http://thepioneerwoman.com/cooking/simple-pan-fried-pork-chops/, they are super skinny with roast potatoes and broccoli I wish my meals stayed as I have planned them, but alas they get bumped each week. Cheesy Chicken Artichoke on the horizon
