Midweek meal planning 8/13/15

Welcome back to Midweek Meal Planning for the week of 8/13/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays. Or Thursdays. (I told you it’s been a crazy week!)

So here’s our week:

  • Sunday: Dinner out with Nana.
  • Monday: Leftovers.
  • Tuesday: Sandwiches & salad & fruit.
  • Wednesday: Chicken enchiladas with homemade sauce (recipe forthcoming!). I used my last couple packs of expiring Perdue Short Cuts from the last Jewel sale on these, but they’re BOGO again this week (or any leftover cooked chicken will do.)
  • Thursday: Leftover enchiladas.
  • Friday: I think I’m going to thaw out some pork chops and serve them with roasted balsamic cherry tomatoes, since we have a TON of garden tomatoes here.
  • Saturday: Grilling up the chicken sausage and corn I just got at Fresh Thyme.

Mon. - Sweet and sour hot dogs over rice. It is a Quick Cooking recipe - I just couldn't locate my book, so I did it from memory - it has bouillon and water, cornstarch, pineapple chunks plus the juice (mixed with the cornstarch), onion, green pepper, hot dogs, soy sauce Tues - Sunday Brunch Casserole from Taste of Home April 1998, p 32 - 8 oz. bacon (or turkey bacon), onion, green pepper, 12 eggs (!), milk, hash browns (I used the dehydrated Hungry Jack kind, putting the water in there ahead and let them soak in the container per the directions), salt, pepper, dried dill Wed. - Kielbasa (Butterball brand), apples, onion, garlic, Kikkoman sweet and sour sauce over rice (it was okay - I only had a half bottle of sauce, and I should have added more to make it taste better Thurs - Hot Dog Casserole (I got it from marzettikitchens.com a few years back. Noodles, hot dogs, hot dog buns (I only had one bun and 7 pieces of bread), butter, parsley, dry minced onion, half and half, mozzarella (or cheddar), sweet pickle relish, mustard, mayonnaise (but I substituted ketchup) I chose this recipe because I was down to my last few onions (needed for something else) and this recipe uses the dried stuff, oh, and I had hot dogs. Fri - Pub burgers from a previous Jewel sale, hamburger buns, baked beans, salad. Also, I made a "chicken brick". I took a package of chicken thighs directly from the freezer (it was in a flat container, had about 10 thighs in there). Bake at 350 for 30-40 minutes, break it apart using tongs, season the chicken with garlic powder, onion powder, salt, cook a little more, maybe 45 minutes more. Sat. - Part of the chicken brick (6 of the thighs), mac and cheese, green beans; and lunch is sandwiches and broccoli cheese soup recipe from Quick Cooking July 2002, p. 42 (called Cheesy Floret Soup) (I am substituting all broccoli). Sun. - Part of the chicken brick - a recipe from Quick Cooking July 2002, p 35, called BBQ Chicken Sandwiches. The four thighs produced about 2-1/3 cups chicken. I doubled the sauce, though, because I'll be doing the simmering later and want more sauce in order to do that.

Sunday: Went to a baby dedication- no cooking! Mon: Italian beef sandwiches with deli beef from Caputo's, fruit and salad Tues: Brie, basil and tomato garlic pasta with stuff from the garden Wed: Onion and cheese enchiladas featured in Aug/Sept. Taste of Home magazine, fruit Thurs: Ham and potato casserole Fri: Dominoes Pizza (yuck) Saturday: going out so leaving kids with leftover ham, eggs, whatever you want. Technically I am making a Key Lime Pie, but I'm not eating that for dinner!
